Ice Cream
This is a great ice cream recipe that's easy to make. Can be whipped up in a few minutes and enjoyed within an hour. The vodka in the recipe is just to break up the iciness but is not necessary to add if you do not use any alcohol
Ingredients
- 350 g frozen strawberries or raspberries
- 1.5 cup double cream
- 1 cup buttermilk
- 0.25 cup milled erythritol
- 0.5 tsp glycerine
- 1 tsp vanilla extract
- 0.5 tsp stevia drops
- 1 tbsp balsamic reduction
- 1 pinch Himalayan salt
- 2 tbsp vodka (this helps with the iciness however if you do not drink alcohol then leave this out)
Instructions
- Add your frozen fruit in your food processor
- Blitz until smooth
- Add all your other ingredients while the machine is running
- Your mixture should be smooth
- Pour into a silicon holder or into individual holders for ice cream lollies
