Cauliflower Rice

Use cauliflower rice in recipes that call for rice such as stir fries or fried rice.  Use cauliflower rice with stews, curries or as a side dish.  Cauliflower rice is an essential for low carb living

Ingredients

  • 430 g Cauliflower
  • 50 g butter
  • 1 tsp Himalayan Salt

Instructions

  • Wash the cauliflower, remove all the greens
  • chop the heads either by using your grater (in which case you will cut the head in quarters) or by putting the cauliflower in your food processor. Process this until it resembles rice.
  • Put cauliflower into a bowl, add the butter and salt and then cover
  • Microwave for approximately 10 minutes on high. You can also sauté your cauliflower in a pan over medium heat in 1 tbsp. olive or coconut oil. Put a lid on and steam for another 4 to 5 minutes
  • Note - the amount of butter is only a guideline as you can use your own discretion and preference to the amount of butter the you like to use. We use Himalayan salt, however you can use the salt that you use on an everyday basis. In comparison 100g of cauliflower rice raw without butter is 2.97g carbs, 0.28g fat and 1.92g protein; 100g long grain white rice raw is 79.09g carbs, 14.03g fat and 7.51g protein; 100g brown rice long grain raw is 73.74g carbs, 2.92g fat and 7.94g protein The nutritional value for this recipe is worked out on the above mentioned quantities
